摘要
为了对真空预冷系统的运行和管理提供完善的理论依据,以具有代表性的球形甘蓝为实验材料,采用理论和实验相结合的方法确定实验装置的泄漏面积和甘蓝的传质系数。实验结果表明,该实验装置的泄漏面积是6.932 6×10-8 m2,甘蓝在真空预冷状态下的传质系数为7.385×10-5 kg/(s.Pa.m3)。该理论方法可推广应用到其它真空预冷系统中,为真空预冷系统的优化奠定了基础。
Leak area and mass transfer coefficient were determined based on spherical lettuce by combination of theory and experiment in order to provide perfect theoretical basis for operation and management of vacuum cooling.Results showed the leak area and mass transfer coefficient were 6.932 6×10-8 m2 and 7.385×10-5 kg/(s·Pa·m3),respectively.The theoretical method can be used in other vacuum cooling system and found basis for optimization of vacuum cooler.
