摘要
对葡萄酒中杂醇油的产生原因进行了分析;提出了降低葡萄酒中杂醇油含量的相应措施;比较分析了测定葡萄酒中杂醇油常用的几种方法。
The formation reasons of fusel oil in grape wine were analyzed.The measures to reducing fusel oil content in grape wine were put forward.And some commonly used methods to measure fusel oil content in grape wine were compared in this paper.(Tran.by YUE Yang)
