三聚氰胺毒理学特征及检测方法

摘要 目的食品和饲料中三聚氰胺的毒理学研究及现阶段样品检测分析方法。总结食品和饲料中三聚氰胺的毒理学研究及现阶段样品检测分析方法。方法目前主要的检测方法包括苦味酸沉淀法、升华法、电位滴定法、高效液相色谱法、气相色谱-质谱法、液相色谱-质谱法和酶联免疫法等。结果实验证明长期摄取三聚氰胺可造人体多脏器损害。结论三聚氰胺是一种三嗪类含氮杂环有机化合物。由于其较高的含氮量而被添加于食品和饲料中用以提高含氮量,对动物和人体造成了一定的危害。 Melamine is a small polar triazine compound.Due to its rich in nitrogen,it has been added to give a false impression of high protein content of milk powders.Melamine added to food and animal feeds could possibly cause fatal bladder and kidney stones.Determination of melamine is therefore of large importance to ensure food safety.This article reviewed the modern methods of determination of melamine in foods and animal feeds including gravimetric method picric acid precipitation sublimation potentiometric titration,high-performance liquid chromatography gas chromatogra-phy-mass spectrometry high-performance liquid chromatography-mass spectrometry and enzyme-linked immunosorbent assay.
