摘要
[目的]研究东北家玫瑰红色素的提取方法和应用条件,为其综合利用提供可靠的试验数据。[方法]以东北家玫瑰花花瓣为原料,用酸性(柠檬酸)食用乙醇提取红色素。在单因素试验的基础上,确定东北家玫瑰红色素的应用范围。[结果]该红色素在酸性条件下比较稳定,在自然光照射和一定温度的条件下,色素稳定性无明显变化。对常用食品添加剂有较好的稳定性,在碱性和温度超过80℃的条件下红色素发生变化,使其应用范围受到了一定的限制。[结论]东北家玫瑰花红色素是一种价廉易得、安全可靠、天然绿色、使用方便放心的天然植物色素。
[Objective] The reliable data for the integrated utilization of erythrophyll was provided through the research on its extraction method and condition from northeast rose.[Method] The erythrophyll from the rose flower petal as raw material was extracted with acid(citric acid) diet ethanol.The application range of the erythrophyll was determined based on the single-factor experiment.[Result] The erythrophyll was stable under the acid condition and in the natural light illumination and under certain temperature,there was not obvious change in its pigment stability,which as the additive in food was with good stability.The erythrophyll would vary under the alkaline condition and the temperature 〉 80 ℃ so that the range of its application was certainly limited.[Conclusion] The erythrophyll from rose was natural plant pigment with the moderately cheap in price,easy production,safe and reliable,natural green.
