摘要
运用国标法对江苏沿海滩涂生长的野生珊瑚菜嫩茎叶营养成分进行测定和分析。结果表明:珊瑚菜嫩茎叶主要营养物中含水量86.81%、粗蛋白1.03%、粗脂肪0.18%、粗纤维3.62%、灰分3.95%;抗坏血酸含量较高,达46.52mg/100g;含18种氨基酸,氨基酸总量为10.661g/100g,鲜味氨基酸含量达3.312g/100g,必需氨基酸模式与FAO/WHO接近;钠、铁的含量丰富,分别为28.37mg/100g、19.35mg/100g,铜、锌、镉、铬、铅的含量未超国家限量标准,食用安全。
According to the national standard law,this study analyzed and evaluated the nutrition components of the tender stem and leaf of the costal wild grown Glehnia littoralis Fr.Schmidt ex Miq in Jiangsu Province.The results showed that the major nutrition of the tender stem and leaf of Glehnia littoralis Fr.Schmidt ex Miq included 86.81% water,1.03% crude protein,0.18% crude fat,3.62% crude fiber,and 3.95% ash,and that the content of ascorbic acid was relatively high,reaching 46.52 mg/100g.It contained 18 kinds of amino acid,and total content of them was 10.661 g/100g,tasty amino acid was 3.312 g/100g,and the model of essential amino acid was approximately to that of FAO/WHO.Besides,the content of natrium and ferrum was rich,which arrives at 28.37 mg/100g and 19.35 mg/100g respectively.The contents of copper,zinc,cadmium,chromium and plumbum do not exceed the amount of national limitation standard,so it's safe to be used for food.
