摘要 该试验以玉米醇溶蛋白为研究对象,研究加热和碳酸钠碱处理对玉米醇溶蛋白提取率和组分的影响。试验结果表明,加热和碳酸钠碱处理分别使醇溶蛋白的提取率降低23%和37%。用反相色谱方法研究了加热和碳酸钠碱处理对玉米黄粉中醇溶蛋白组分的影响。图谱分析表明,加热处理可以使醇溶蛋白各组分的疏水性能和相对提取率增加。而碳酸钠碱处理未分离出疏水性强的组分。 The effect of pretreatment method on extraction rate and components of zein were investigated using zein as research material. The results showed that heat treatment and alkali treatment deceased extraction rate of zein by 23% and 37%, respectively. The components of extracted zein were explored by reversed phase chromatography. Through chromatogram analysis indicated that the hydrophilicity and extraction rate of compo- nents of zein were increased by heat treatment, while no hydrophobic components were isolated from zein by alkali treatment.
