摘要
目的:了解市售鸡蛋的沙门菌污染情况,为鸡蛋的贮存保鲜和食用提供卫生学方面的参考。方法:采用测试片法和国标方法对鸡蛋蛋壳和蛋内容物中的沙门菌进行检测,比较两种检测方法的差异。结果:检测蛋壳表面时,两种检测方法的检测结果完全一致,符合率达到了100%;检测鸡蛋内容物时,用国标方法检测出了6个阳性,而用测试片法则检测出了7个阳性,后者比前者阳性检出率要高出2.5个百分点,两种方法的阳性符合率为85.7%,阴性符合率高达100%。阳性样品所含的菌落数量,测试片法的检测结果要比国标方法的稍少,但也均能达到80%以上。结论:测试片法可以应用于鸡蛋等食品中沙门菌的检测初筛,可以考虑作为国标方法的补充。
Objective:To understand the contamination state of Salmonella in commercial eggs,and provide hygienic reference for fresh storage and edible way of eggs.Methods: Test plate method and national standard method for the detection of Salmonella in eggshell and egg contents were studied and the differences between them were compared.Results: When detecting the surface of eggshell,the results of the two methods were same and the coincidence rate was 100%.While in the case of egg contents,six positive samples were detected out by national standard method and seven of those by test plate method,compared with the former,the positive detection rate increased by 2.5 percentage point by test plate method,the positive coincidence rate was 85.7% and the negative coincidence rate was 100%.The colony numbers of positive samples detected by test plate method were slightly lower than those by national standard method,which can also reach more than 80%.Conclusion:Test plate method could be used to detect Salmonella in eggs and could be as referenced supplement of national standard method.
