摘要
对辖区内食用明胶销售摊点或企业进行摸底排查,了解食用明胶产品中的铬含量,为使用明胶作为原料的食品进行风险监测研究奠定基础。采用原子吸收光谱法对食用明胶进行样品预处理和含量测定。方法的线性良好,在线性范围0 mg/L~0.500 mg/L内,相关系数达0.999 6;测试样品的RSD值为1.32%~8.34%;回收率为82.2%~104.4%。调查的结果显示,按照皮食用明胶B、C级的要求,27份抽查样品的合格率仅为40.7%。用原子吸收光谱法测定食用明胶中铬的含量,操作简便快捷,结果准确可靠;潮州市食用明胶中铬含量超标严重,最后对相关产品的监管等方面提出了部分建议。
To invest the content of Chromium in edible gelatin of part markets and enterprises in Chaozhou, the research on the food risk is based on it. The random-inspected samples were pretreated following the method of the national standard of china, and determined by atomic absorption spectrometry. The method had good linearity and the linear range was from 0 mg/L to 0.500 mg/L and the correlation coefficient was up to 0.999 6. The RSD of the test samples ranged from 1.32 % to 8.34 % and the average recoveries of samples were between 82.2 %- 104.4 %. The investigation results indicated that the qualified rate of edible 40.7 %. The method by atomic absorption spectrometry was accurate, reliable, convenient, precision; and the chromium content of edible gelatin in Chaozhou exceeded the allowed Meanwhile, some proposals are put forward to the relative products' monitoring gelatin was only rapid and good limit seriously.
