醇碱改性制备高凝胶强度κ-卡拉胶 被引量:1

Preparation of High Gelling Strength κ-Carrageenan by Ethanol-Alkali Modification

摘要 为了提高κ-卡拉胶的产率和凝胶强度,研究了醇碱改性处理麒麟菜制备κ-卡拉胶工艺。通过正交实验确定了最佳工艺参数为:碱浓度3%、改性时间1.5 h、改性温度75℃。其凝胶强度达2 567.9 g/cm^2,产率39.15%,粘度、透明度、色泽等指标明显优于传统碱改性工艺。该工艺减少了原辅料投入和环境污染,适合工业化生产。 In order to improve the yield and gel strength of κ-carrageenan extracted from Eucheuma cottonii, the ethanol-alkali modification processes have been studied. The optimal parameters were established:alkali concentration 3%, modification time 1.5 h, modification temperature 75℃. The gelling strength reached to 2567.9 g/cm^2. Termination yields was 39. 15%. And the viscosity, transparency and color of the products were significantly superior to the κ-carrageenan produced by traditional alkali modification process. The ethanol:alkali modification has many advantages such as simple treatment condition,less raw and auxiliary material and contamination, which is suitable for industrial production.
