摘要
大麦籽粒具有很好的保健与药用价值,糯性裸大麦基于其特殊的结构与化学成分,近年来受到了国内外科学家的关注,日渐成为食用大麦的研究重点。从营养价值和食品加工2个方面分析了糯性裸大麦的功能优势,介绍了国内外科学家在糯性裸大麦的利用及加工工艺方面的研究进展,对糯性裸大麦作为功能型大麦的开发利用价值与前景作出了肯定。提出进一步开展功能型大麦利用潜力和相关加工技术研究,对增加食品的多样性、提高大麦的附加值及经济效益、加快农业产业结构调整升级、增加农民收入都具有长远和非常重要的意义。
Barley grain has very good health care function and medicinal value. By virtue of its special structure and chemical composition, waxy hulless barley has more advantages on nutritional value and food processing. In recent years, it attracts great attention both home and abroad, and turns out to be the focus of edible barley research. Referring to its nutritional value and food processing development, functional advantages of waxy hulless barley were introduced, and its exploiting value were confirmed. Processing technology of functional barley was put forward, which could help to increase food diversity, to add baley's economic benefit, as well as to speed up the agricultural industrial structure adjustment and to increase farmers' income.
