宰前饮水短期添加硫酸镁对育肥猪肉品质的影响 被引量:4

摘要 选取体重约94.5 kg的杜×长×大三元杂交猪16头,随机分为2组:对照组和加MgSO4(500 mg/L)组,考察宰前饮水添加硫酸镁对试猪血液理化指标、猪肉品质的影响。结果表明:宰前饮水添加MgSO4能显著提高血清镁含量,降低了L2*4 h(P<0.05),提高了a2*4 h(P<0.05),并有降低滴水损失和剪切力的趋势。这些结果表明饮水中加MgSO4改善了肉色,提高了肉的品质。
