亚硫酸品红法检测水发食品中甲醛的线性关系 被引量:5

摘要 探讨亚硫酸品红法测定水发食品中甲醛含量的线性关系。用亚硫酸品红法检测鱿鱼、虾仁和腐竹中甲醛含量,将试样匀浆,其蒸馏液中有甲醛存在时,亚硫酸根离子与品红生成紫色络合物,显色时间与试液中甲醛含量成反比,由此可定性检测或在一定范围内半定量检测试样中甲醛。待测样液中甲醛含量在1~10μg/mL区间,显色时间在55~13 min之间,且甲醛含量与显色时间有很好的相关性(相关系数r=0.9949),其结果与SC/T 3025-2006推荐的乙酰丙酮法的检测结果在一个数量级内,是一种操作简便、条件要求低、而有参考价值的定性检测法,适合现场定性检测水发食品中甲醛含量及对大批该类样品中甲醛含量的分级检测。 Experiments explored the formaldehyde inspection linear relationship of water-soaked foodstuffs by sulfurous acid-magenta method. Detected the formaldehyde content in squid, shelled shrimp and bean milk cream in tight rolls with sulfurous acid -magenta method, made test samples to homogenate paste, if formaldehyde exist in paste distillation, the reaction of sulfite ion and fuchsine reagent was produced and generated purple color complex, color development time was inversely proportional to formaldehyde content in testing liquid. Therefrom, the qualitative testing or the semiquantitative detecting within a certain range of formaldehyde content can be conducted to test samples. When the solution formaldehyde content was between 1-10 ug/mL, the color developing time was between 55-13 min. There was a good correlation between the formaldehyde content and the color developing time(coefficient is 0.9949). The results in the same order of magnitudes as the consequence of acetyl acetone method that recommended by SC/T 3025-2006. This method's operation was simple, the conditions requirement was lower, the linear relationship was remarkable in qualitative measurement, and suited to examine formaldehyde content of water-soaked foodstuffs qualitatively and graded a large number of this kind samples on the scene
