开发高职烹饪旅游专业《〈红楼梦〉饮食文化》校本教材,旨在把《红楼梦》饮食文化传承和高职烹饪旅游学生饮食文化素养的习得结合起来,促进学生专业能力和综合素质的提高。本文从《〈红楼梦〉饮食文化》校本教材开发的意义、开发原则、开发内容等方面,探讨了《〈红楼梦〉饮食文化》校本教材的开发。
Compiling the textbook Culinary Culture in Dream in the Red Mansion is an attempt to pass down the culinary culture in Dream in the Red Mansion and to improve the cultural awareness of the students of tourism and cuisine at higher vocational schools. This paper explores the development of the textbook in terms of significance, principles and contents.
