摘要
随着优质鱼油需求量的日益上升以及许多国际性组织对优质鱼油的标准不断提高,常规的鱼油精炼工艺已经不能满足粗鱼油中有机污染物、重金属、胆固醇以及风味完善的控制。国内外对这几个方面的研究也越来越多,其中很多优秀成果和先进技术可以保证优质成品精制鱼油的生产。通过对这些关键技术进行总结和分析,期望能对安全优质的鱼油生产提供参考,从而保证鱼油产品的质量。
With the rise of quantity demanded of superior fish oil and the increase of standard of it by many international organizations, the traditional refining technics of fish oil was not satisfied with the con- trol of organic pollutant, heavy metal, cholesterol and improvement of flavor in crude fish oil. Substantive investigators dedicated to these advanced technologies globally, and many of them could ensure high qual- ity refined fish oil. Critical steps to control organic pollutant, heavy metals, cholesterol and off flavor were summarized to provide guidance for producing fish oil with high quality.
