摘要
本文介绍了HACCP体系在休闲饮品冰沙生产制作中的具体应用。通过一系列食品微生物检验确立了关键控制点(CCP)、临界参数和纠偏措施,最终形成了咖啡厅冰沙制作的HACCP体系。从而提高了产品的质量,保证了产品的卫生安全。
This article presents the application of the HACCP system in the processing of smoothies beverage. Through a series of micro-organisms tests, critical control points, critical parameters and correction measures were determined. An HACCP system of smoothies producing in coffee shop was created so as to improve the hygiene quality of the product and guarantee the product safety.
