摘要
辣椒红色素是一种营养、保健的天然食品添加剂,应用前景广阔。介绍辣椒红色素的理化及加工特性,简述萃取法、超临界CO2流体萃取法、溶剂微波提取法、超声波溶剂提取法和酶法这几种提取辣椒红色素方法的优缺点及适宜条件。
Capsicum red pigment is a natural food additive of nutritious and heahhcare functions. This paper deals with the physico-chemical and processing characteristics of capsicum red pigment. Such extraction techniques as liquid extraction, supercritical CO2 fluid extraction, solvent microwave extraction, ultrasonic solvent extraction, and enzyme extraction are examined and compared in this paper.
