摘要 [目的]研究微波辅助萃取豆渣中水溶性大豆多糖的工艺条件。[方法]采用苯酚-硫酸法测定得糖率,分别研究液料比、萃取时间和微波功率对萃取豆渣水溶性大豆多糖的影响,并采用正交试验对工艺条件进行优化。[结果]正交试验初步确定微波辅助萃取豆渣中水溶性大豆多糖的最佳条件为:液料比为40∶1,微波功率为320 W,萃取时间为35 s。在该条件下,得糖率约为12.09%。[结论]微波辅助法可显著提高大豆豆渣水溶性大豆多糖的提取效率。 [Objective] The aim was to study the technological conditions of soluble soybean polysaccharide(SSPS) extracted from soybean dregs based on microwave-assisted.[Methods] Phenol-sulfuric acid process was used to determine polysaccharide yield,the single factor experimentation was made in the soybean dregs by adopting different extraction temperature,liquid-solid ratio and extraction time.The extraction conditions were optimized by orthogonal experiment.[Results] The optimal extraction technology parameters of SSPS by orthogonal experiment were as follow: the power was 320 W,liquid-solid ratio was 40∶ 1,extraction time was 35 s.The method of phenol-sulphate acid was applied to determine the yield of SSPS,the yield of SSPS was 12.09%.[Conclusion] Microwave assisted extraction can improve the extraction efficiency of soluble soybean polysaccharide(SSPS) from soybean dregs.
