摘要
以脱脂豆粕粉为原料,具有分泌丰富酶系能力的菌株枯草芽孢杆菌KJ为发酵菌株,通过单因素试验,确定最优发酵降解条件.得出最佳发酵工艺:豆粕粉6%,葡萄糖2%,接种量9%,菌龄12 h,经发酵48 h后,豆粕粉蛋白中小分子肽含量达58.86%,比发酵前提高了37.99%.
Defatted soybean meal powder was used as substrate and fermented by the stain Bacillus subtilis KJ which could secret proteinase. The optimum conditions of microorganisms for the degraded soybean meal power was defined by the single -factor test. The results showed that the optimum conditions were as follows: the soybean meal content was 6%, the inocluation amount was 9%, the liquid seed with the cell age of 12 h, the fermentation time was 48 h, the small peptides content of soybean meal protein could reach 58.86 %, which was 37.99% more than the small peptides content under the conditions before fermented.
