2010年河南省仓储小麦品质状况研究

Research on quality of storage wheat in warehouse of Henan province in 2010

通过对河南省仓库存储的2010年收获的27份小麦样品进行检测,分析其籽粒品质及面团流变学特性。结果表明,2010年仓储小麦中,100%的小麦样品容重达到三等及以上,81.48%的小麦样品籽粒粗蛋白质质量分数在14.0%以上,22.22%的小麦样品湿面筋质量分数在32.0%以上,44.44%的小麦样品稳定时间在7.0min以上,59.26%小麦样品的降落数值在300s以上,达到《优质小麦强筋小麦》(GB/T 17892—1999)品质标准的规定。

27 kinds of newly harvested wheat samples of Henan province in 2010 in storage were tested and the grain quality and dough rheology characteristics were analyzed. The results showed that： in the storage wheat in 2010, the bulk density of 100 % wheat samples were all above three level, the grain protein content of 81.48% wheat samples were more than 14.0% ,the wet gluten content of 22.22% wheat samples were beyond 32.0% ,the dough stability time of 44.44% wheat samples was over 7.0 rain, and the falling number of 59.26 % wheat samples was more than 300 s,which all reached the requirements of high quality wheat-strong gluten wheat GB/T 17892--1999.
