摘要
目的了解深圳市售热加工食品中呋喃的污染状况。方法应用稳定同位素稀释技术结合顶空气相色谱-选择离子监测(SIM)质谱法检测购于深圳市场的热加工食品中呋喃含量。结果共检测热加工食品样品156份,呋喃的检出率为67.3%(定量检出限为2.0μg/kg),105份阳性样品中呋喃的污染水平为2.2~896μg/kg,其中咖啡、酱油、婴幼儿食泥及部分零食中呋喃含量的平均值为18.3~482μg/kg。结论深圳市售热加工食品中广泛存在呋喃,其中咖啡、酱油、脆香米面制零食和婴幼儿食泥是呋喃摄入的重要来源。
Objective To investigate the levels of furan in a range of selected heated foods sold in Shenzhen.Method The samples were analyzed for furan using an established GC-MS technique in SIM mode with the deuterated internal standard.Result Furan was quantified at or above 2.0μg/kg in 105(67.3%)of 156 samples sold in Shenzhen,at levels of furan in coffee,soy sauce,jarred baby food and parts of savory snacks was 18.3~482μg/kg.Conclusion Furan is found in many heated foods in Shenzhen.Coffee,jarred baby food and savory snacks are the important intake sources of furan.
