摘要
生产实习是烹饮与营养教育专业教学计划的重要组成部分,生产实习的效果在一定程度上决定了学生技能的高低.通过实地考察与问卷调查,发现该专业生产实习中存在很多问题.笔者从学校、学生和企业三者的关系对该专业生产实习的现状、存在问题及原因、解决对策等方面进行了探讨.从实习时间、实习地点、实习方式以及对实习生的管理等方面提出了改进意见,以期为学校的教学改革和该专业的建设提供参考.
Practice is an important component of cuisine and nutrition education,and its effect may have a great impact on the students' skills.Actual investigation and questionnaires show that there are many problems during the practicum.The paper discusses the status of practicum,existing problems and causes,and strategies on the basis of the relationship among school,students and corporation.The paper also makes suggestions concerning the time,place,methods and management of practicum so as to provide reference for curriculum reform and program development.
