摘要 本文主要对黑米紫色素的提取条件和稳定性进行研究。实验确定了黑米色素提取溶剂、溶剂浸泡黑米时间、黑米的用量、提取温度和提取时间。结果表明;将黑米碾碎过100目筛子后,用300ml的95%乙醇浸泡1d,在45℃、0.08Mp的条件下用旋转蒸发仪减压蒸馏,之后用石油醚进行蒸馏得到黑米紫素色。之后用一定量黑米紫色素溶液进行了不同pH、不同有机酸、不同金属盐、热、光对黑米色素颜色及稳定性影响的研究。 This assay studied on extraction and stability of black rice purple pigment.After exploring experimental condition of extraction—selection of resolver of soaking the black rice 、selection of how much volume of the black rice pigment 、selection of how long we should soak the black rice,selection of whether adds the acid or not in soaking black rice,selection of how many black rice we use 、selection of suitable temperature and suitable time of extraction choice,conclusion is that before soaking for 1 day with the 300ml 95% ethyl alcohol,the black rice should grind with 100 item of screens,and with 45℃,the 0.08Mp condition using the revolving evaporation mechine reduced pressure distillation,then using benzine carries on the distillation and gets black rice pigment.And have the research of black rice pigment's effect and the stability of pH,the organic acid,the metal salt,the heat,the light.
