摘要
L-乳酸是近年来国内外发展很快的一种有机酸。由于人体只能代谢L型乳酸,D型乳酸摄入人体后,会导致代谢紊乱,产生酸中毒,因此从健康角度考虑,用L-乳酸取代D-乳酸和DL-乳酸具有重要意义。本文介绍了乳酸及其衍生物在食品工业中的应用。
L-lactic acid is an organic acid that has developed very fast in recent years. Human body metabolizesonly L-lactic acid, and the absorption of D-lactic acid leads to metabolic disorder. From thepoint of health, it has a important meaning that L-lactic acid replace D-lactic and DL-lactic acid.
