摘要
对大蒜的去皮剂和脱臭剂进行了筛选，研究确定了大蒜快速脱皮和脱臭的方法．抑菌试验和营养成分分析表明，该方法合理可行．
he article sifted deodorant and peeling agent of garlic,and the method of fast deodorizing and peeling was determinated.The correctness was demonstrated by determinated nutrient content and made bacteriostatic test.
