摘要
将各种温度处理的标准蛋白质进行了阴离子交换高效液相层析,结果表明,冻融交替并常温放置长时间,以及水溶解或特定pH缓冲溶液溶解经贮藏一定时间,会导致肌蛋白降解或发生变化.
Using anion exchange chromatography column MonoQ, the structure change underdifferent temperature are compared, the result showed that myoglobin stored in water orpiperazine(pH5. 7) at─20℃, after freezing-thawing, at thawing interval 8 hours. The proteinbreak down more easily than store ambiently or freez-thawing alone.
