摘要
根据我所七十年代以来的试验研究结果,结合前人的研究,较系统地论述了鲜叶原料、自然条件、生长季节以及农业技术措施等对儿茶素的含量与组成的影响;茶树品种的适制性和红、绿茶的品质与儿茶素的含量和组成之间的相互关系.阐明了茶树品种儿茶素组成规律,重点论述了云南大叶茶一代的儿茶素组成特殊性和云南大叶茶二代儿茶素组成所表现的遗传动摇性和野生大茶树的儿茶素组成的独特性等等.
Catechin is a main compound in the tea shoot. This paper deals with the effect of green leaves material, natural codi tions,growth seasons and agrotechnical measures on the content and composition of catechin,the correlation among suited-processing tea varieties,tea quality and the content and composition of catechin and so on . Meanwhile,the characteristics of catechin constituents of wild arboreous tea plant and Yunnan Dayezhong wer discussed.
