摘要 据新疆的特殊自然条件,对浓香型白酒酒醅发酵中微生物消长、物质变化进行研究,初步弄清了酒醅发酵微生物消长、物质变化的状况。 According to special nature conditions, we have conducted the research of material change and microbe growth and decline in fermented glutinous rice of heavy fragrance liquor and gained an initial clear idea of the situation of the microbe growth and decline and material change. It has a guide affect to the product of heavy fragrance liquor in theory and practice.
