摘要
本文研究了一种利用 Clark 氧电极监测在戊二醛与乳制品中蛋白质或氨基酸的氨基反应中所消耗的氧,从中快速制定蛋白质含量的新方法。其方法准确,操作简便,样品不需前处理,省时价廉。方法的线性范围、相关系数及重现性变异系数分别为:2.0×10<sup>-3</sup>~5.5×10<sup>-2</sup>mol/L,r=0.997和 cv%=7.18。
The clark oxygen electrode was applied to detecting the oxygen consumed in the reaction of glutaraldehyde with the compound contaiming amino group (?) amino acids and protein of dairy products.The protein co(?)tent can be dutermined quickly.It is accurate,simple.and becanse of the omission of pretreat(?) of samples.it's also a(?) and low cost method. The oxygen consumed correlated to protein content linearly. when its co(?)centration was between 2.0×10^(-3) and 5.5×10^(-2) mol(?).The correlation coefficient(r was 0.997 and the co- (?)fficient variation of the rep(?)tion(CV(?)was 7.18.The protein contents of three kinds of dairy products(fresh milk. powdered milk,and the mixture of powder(?)d milk and soybean)from market were measured;(?)omparing with (?) tional Kjelda(?)'s method.the standard deviation and (?)lues of the differences were 0.123,1.60;0.80.2.28;1.75.1.74(?) sp(?)tively N,(?)signifi(?) differences were found at the level of P>0.05.So the meth(?)d can be applied to nor(?) a(?) and routine detection of the protein content in da(?) produets.
