摘要
就萤光分光光度法定量测定果酒中苹果酸含量的测定条件、影响因素和方法的可靠性等进行了探讨,找出了最适条件,并在此条件下对几种果酒中苹果酸进行了定量分析。此方法优于其他几种常规分析法,对果酒在发酵、和成品贮藏等过程中苹果酸含量的变化进行跟踪有一定的实用意义。
A study on determination of malic acid content in the wines by fluorimetric method is presented . Discussing the measuririg conditions,the influencing factors,the method reliability and so on,the best condition of the measurement method was found.A lot of data showed that the method has many advantages such as hight sensibility,good reproducibility,good linear relationship and simple in procedure.The method was also used to determine the malic acid contents of some wines.It is found that the cofficient of variance is less than 3%,recovery is over 90% and the fluorescence intensity is directly proportional to malic acid content while in low concentration.The method can be widely used for the determination of malic acid content in the musts,the store of wines and the soy sauces.
