无铅松花鸡蛋加工技术的研究

A Study on the Lead-free reserved Egg Production

本文用小试筛选出的铜、锌混合盐进行生产性试验加工无铅松花蛋,并与有铅法生产的松花蛋进行对比。在传统生产基础上,改变配方,采用新工艺生产无铅加工溏心松花蛋。

Zinc-Copper salt mixture selected in pretrals were used to produce lead-free preserved eggs experimentally.The produced eggs were compared withthese produced by traditional lead treatment methods.On the basis of trad-itional producing procedure,Lead-free preserved eggs were produced by alte-ring processing formula and applying a new processing procedure.
