摘要
摘要鸟贡一号(商品名为上农黑籼)引种及其利用课题已于1989年9月通过局级技术鉴定,是上海地区首次种植黑稻籼型类型成功的品种,为了开发利用黑稻,本文就鸟贡一号的米粒外观、碾米品质、蒸煮和食用营养品质进行分析,取得了定量数值。发现乌贡一号的含铁量较高,维生素B_1、B_2,以及蛋白质、赖氨酸含量都明显高于一般白米。为开发利用黑米食品,提供了原料的内含物营养指标和煮食方法的可靠依据,为黑米开辟了广阔的前景。
ABSTRACT “The introduction and applying of wu Gong No.1”was passed the technical evaluation at the bureau level in Sep. 1989. The deriety is the first black Indion rice planted successfully in Shanghai area. This paper reviewed the analytic results for appearance of grains, milling quality of rice and nutrient qualities of cooking and eating Which provided some quantitative data. It is found that the rice contains more iron, vitamin E_1 and B_2, protein and lysine than common white rice. So, it supplied raw material for developing black. rice food. The reliablity of the contents and cooking mcthod will open up broad prospects for the black rice.
