摘要
采用微波辐射的方法提取胡萝卜中的果胶。实验考察了微波辐射时间、微波火力、草酸铵浓度、料液比及醇析中乙醇浓度对提取率的影响。实验确定微波条件下提取果胶的最佳工艺条件是:微波辐射时间2min,微波火力为中火,草酸铵浓度4g.L-1,料液比1∶15(g∶mL),醇析中乙醇的浓度是70%,提取率可达6.907%。
The pectin was extracted by microwave from carrot,the effects of microwave irradiation time,microwave firepower,content of ammonium oxalate,solid-liquid ratio,ethanol concentration in alcohol precipitation were studied in the test.Optimal conditions were obtained by test:microwave irradiation time was 2min,microwave firepower was secondary fire,content of ammonium oxalate was 4g/L,solid-liquid ratio was 1∶15(g∶mL),ethanol concentration in alcohol precipitation was 70%,The extraction rate of carrot pectin reached 6.907%.
