摘要
以脂肪酸配比合理的混合植物油为芯材,大豆分离蛋白(SPI)和麦芽糊精(MD)为复合壁材,大豆卵磷脂为乳化剂,采用喷雾干燥工艺制备微胶囊化营养油。利用中心组合设计(CCD)对微胶囊营养油的配方进行优化,得到营养油微胶囊的最佳配方为:芯材质量分数为27.28%,固形物质量分数为39.74%,大豆分离蛋白质量分数为40.00%,卵磷脂质量分数为1.47%。在此条件下,得到MEE和MEY的理论最大值分别为91.188%和96.1129%,期望度为0.894。
Nutritional oils for infant formula was microencapsulated by spray drying method with coating materials including maltodextrin (MD), soy protein isolate(SPI) and emulsifier (soy lecithin). The optimization of nutritional oils microencapsule was used central composite de- sign (CCD), the results show that the optimal formula of nutritional oils microencapsule is nutritional oils 27.28%, solids concentration 39.74%, SPI concentration 40.00%, soy lecithin 1.47%o With this understanding, the MEE and MEY can reach 91.188% and 96.1129% under optimal condition. The expectation of nutritional oils microencapsule is 0.894.
