摘要
参照国家标准对一批出现胖听和泄漏的橘子罐头进行商业无菌检验,接种酸性肉汤和麦芽浸膏汤均未见微生物生长,无法判断是否为非商业无菌。根据柯赫法则的原理,将胖听罐的汤汁接种到正常的糖水橘子汤汁中,汤汁产气变浑浊,经分离鉴定为酿酒酵母。研究表明,柯赫法则可以成功应用于罐头商业无菌检验,解决现行标准不能检测的难题。
A swell and leakage Citrus reticulata can was examined according to the national standard of commercial sterilization.Acid broth and malt extract broth were inoculated.It is difficult to judge whether the status of the can is commercial sterilization or not because no growth in all broth after incubated.The juice of the swell can was inoculated to the juice of a normal can on the basis of Koch's postulates.The juice became gassing and cloudy after incubated and a strain of yeast was isolated and identified as Saccharomyces cerevisiae.The results show that the Koch's postulates can be used in the examination of commercial sterilization and solve the problem which national standard can not do.
