摘要 [目的]研究大豆异黄酮的微波辅助乙醇提取工艺。[方法]以乙醇作为提取剂,微波辅助从大豆中提取大豆异黄酮。在单因素试验的基础上,通过正交试验,考察了乙醇浓度、料液比、微波时间、提取温度、提取时间5个因素对大豆异黄酮提取量的影响。[结果]微波辅助乙醇提取大豆异黄酮的最佳工艺条件为:乙醇浓度(体积分数)80%,料液比1∶16 g/ml,微波时间4 min,提取温度70℃,提取时间2 h。在该条件下,大豆异黄酮的提取量为25.37 mg(20 g脱脂大豆粉)。[结论]用该工艺提取方法简单可行,不仅节省时间,而且提取量高。 [objective] To study extraction technology of isoflavone from soybean by microwave assisted and ethanol extraction method.[Method] Isoflavonoids were extracted from soybean with alcohol as extractant assisted by microwave.Based on single factor analysis and orthogonal test,alcohol concentration,solid-liquid ratio,microwave time,extraction temperature and extraction time were investigated on the effect of soybean isoflavone extraction amount.[Result] The optimum extraction technology of isoflavone was as follows:alcohol concentration of 80%,solid to liquid ratio of 1∶ 16 g/ml,microwave time of 4 min,extraction temperature of 70 ℃ and extraction time of 2 hours.Under the condition,the extraction amount of soybean isoflavone was 25.37 mg(20 g defatted soybean powder).[Conclusion] The extraction technology was simple and feasible with higher extraction amount.
