酿酒原料青稞中挥发性化合物的研究 被引量:5

摘要 建立了顶空-固相微萃取(HS-SPME)结合气相色谱-质谱联用技术(GC/MS)分析青稞中挥发性化合物的方法,采用这一方法对瓦蓝、肚里黄、白青稞、黑老鸭等四种青稞酒原料进行分析,分别获得28种、25种、24种和24种组分的定性结果,不同青稞品种间化合物种类接近又各具特点。这一研究拓展了固相微萃取技术在酿酒原料分析中的应用,为青稞品种筛选、特征评价及原料青稞与成品酒的相关性研究提供了有效的手段。除列表分析结果外,还对样品提取方式、不同品种青稞的挥发性组分分析结果作了研讨。 A method for the analysis of volatile compounds in hullessbarley by Headspace Solid Phase Microextraction(HS-SPME) with Gas chromatography-mass spectrometry(GC/MS) was developed in this paper.Four kinds of materials of highland barley liquor including Walan,Dulihuang,Baiqingke and Heilaoya were analysed using this approach.Therefore,28,25,24 and 24 kinds of compounds were identified respectively.The results showed that different types of hullessbarley had similar components but each had their own characteristics.The research expanded the application of SPME in the analysis of liquor-making material.Furthermore,it offered an effective approach for the varieties selection and feature evaluation of hullessbarley and helped to the study on the correlation between hullessbarley and the end product.In this paper,the analysis results were tabulated,the pretreatment method and comparative analytical results of different kinds of hullessbarley were also discussed.
