摘要 食品溯源是从生产到消费或从消费到生产各环节收集食品及其相关信息的过程,食品溯源在食源性疾病暴发应对中有助于查明可疑食品的来源和分布。2011年5月,德国发生肠出血性大肠杆菌O104:H4感染引起的暴发疫情,在应对过程中,欧盟有关组织和德国相关部门开展了溯源和追踪调查以锁定暴发来源。本文对该项溯源调查进行概述,并探讨欧盟在溯源系统建设方面的经验,以为我国食品安全溯源体系建设提供参考。 Objective Food tracing means collecting information through the food chain from production to consumption,either backward or forward,helping to identify the source and distribution of suspected foods in foodborne disease outbreaks.An outbreak caused by Enterohemorrhagic Escherichia.Coli O104:H4 infection has happened during May to July in 2011 in Germany.With the help of food tracing investigation system,the source,fenugreek seeds imported from Egypt,was eventually identified.This article gives an overview of the tracing investigation,as well as the experiences of European Union in establishing the tracing system,which will provide references to China.
