不同温湿度条件下青花菜失水率预测模型的建立 被引量:3

Predictive modelling of moisture loss of broccoli on different storage conditions

摘要 以"绿秀"青花菜为试材,研究了不同温湿度下青花菜的失水率随时间的变化规律,并以此为基础,运用化学反应动力学和阿伦方程(Arrhenius equation)得到青花菜失水率的预测模型(R2>0.91)。 The changes of the moisture loss of broccoli(Brassica oleracea lvxiu)on different storage conditions(e. g. temperature and relative humidity)were investigated,the prediction model of the moisture loss of broccoli by chemical kinetics and Arrhenius law were obtained.
