高温米糠粕中蛋白质高温提取工艺研究 被引量:5

摘要 以高温粕为原料,采用碱法提取蛋白。单因素实验确定最优温度、料液比、时间,通过正交实验确定最佳提取工艺。实验结果表明:碱法提取高温粕中蛋白质的最佳工艺为温度110℃,料液比1∶12,时间3h,得到最高提取率33.2%。 Used rice bran as material to extract protein by alkali extraction,single-factor design was used to determine optimal temperature,material-liquid and time. The optimal extraction conditions were achieved by orthogonal experiments. Results indicated that the optimal extraction processing parameters by alkali extraction were extraction temperature of 110℃,material-liquid ratio of 1∶ 12,extraction time of 3h,and the highest extraction rate of rice bran protein was 33. 2%.
