摘要
壳聚糖是一种天然生物多糖,它来源于自然界中含量丰富的甲壳素。经过降解后,低聚合度水溶性壳聚糖展现出优良的生物活性。对利用专一性酶和非专一性酶制备低聚水溶性壳聚糖及其水解产物的应用进行了介绍,并且提出了进行工业化生产需要重点研究的方面。
Chitosan is a natural biological polysaccharide and it is originated from Chitin. After several steps of degradation,it shows excellent biological activity. Specific and non-specific enzymatic hydrolysis of chitosan and its product application were introduced,and several aspects about water-solubleoligo-chitosan manufacturing were showed.
