贝类食物中毒病因分析及预防对策研究 被引量:7

摘要 目的: 研究贝类食物中毒的病因及预防对策。方法: 通过对五起贝类食物中毒病因、流行特征, 以及贝毒的毒力、化学结构进行分析, 对中毒的季节、气象条件、赤潮的形成和贝类染毒的关系作了研究。结论: 认为海洋环境的污染和赤潮是贝类染毒的主要途径, 建议贝毒的国家食品卫生标准定为4MU (小白鼠单位), 基层卫生监督机构的检验方法, 应优选小白鼠生物测定法, 沿海卫生监督机构应建立海水污染、赤潮, Objective:To study on pathogeny and prevention measures to shellfish poisoning.Methods:Study was conducted on pathogeny,epidemiological characteristics of five cases of shellfish pisoning.Chemical structure and virulence of shellfish toxin was analysied.Relationship of season,meteorological condition,formation of red tide with shellfish contamination was studied.Conclusion:Sea pollution and red tide are the main way of shellfish contamination.We recommended that the national food hygienic standard should be 4 Mu(mouse unit).Mouse bioloyical test should be the preferential methods that applied in gross roots sanitary supervision institution.Surveillance and early warning system of sea pollution,rea tide,dinofiagellate and shellfish contamination should be founded in coastal sanitary supervision institution.
