摘要
自古以来,茶在中华饮食文化中便占有重要的地位,中国人"开门七件事:柴、米、油、盐、酱、醋、茶",说明茶在中国人日常生活中是不可或缺的,而客家人更是讲究喝茶的民系。数百年来,台湾客家人经受了严苛环境的考验,为了生存,不仅养成了克勤克俭、吃苦耐劳的性格,亦习惯于耕山种茶的产业活动。台湾客家茶文化蕴涵着浓厚的礼俗精神,其内涵常藉由日常生活中的习俗加以呈现。本文旨在探讨台湾客家饮食文化中的茶文化,彰显台湾客家餐饮中的饮茶文化,并进而指陈未来台湾客家茶产业的发展方向。
Since ancient times,tea has been enjoying a prominent position in Chinese food and drink culture.A Chinese proverb says,"There are seven things one cannot do without on a single day: wood,rice,oil,salt,sauce,vinegar,and tea",which proves convincingly the importance of tea in the life of the Chinese.Hakka is known for their strong liking for tea.For hundreds of years,Hakka have lived in straitened circumstances,and they work hard and grow tea in order to survive.And Hakka tea culture carries with it abundant information about etiquettes and manners,whose connotations find expression in daily practices.This article discusses and highlights Hakka tea culture in Taiwan,and gives the direction for the development of Hakka tea industry in the future.
