人工养殖三文鱼营养成分的分析 被引量:23

摘要 分别使用微量凯氏定氮法、索氏抽提法、550℃灼烧法、气相色谱法、原子吸收法、氨基酸自动分析法等对都江堰人工养殖的三文鱼肌肉中蛋白质、脂肪、灰分、脂肪酸等营养成分与营养品质进行分析检测。结果表明:养殖三文鱼肌肉干样中含粗蛋白55.44%,粗脂肪39.42%,粗灰分5.07%,含18种氨基酸,总氨基酸含量是32.22%,必需氨基酸(EAA)含量是13.90%,含有多种对人体有重要生理功能的矿物质和微量元素如钙、磷、铁、锰、锌、镁、铜等,且重金属指标如铬、镉、铅等符合GB 18406. The nutritional components of artificial breeding salmon muscle such as protein,fat,ash,fatty acid were tested and analyzed by Kjeldahl determination,Soxhlet extractor method,incandesce in 550 ℃,gas chromatography,atomic absorption method and amino acid autoanalyzer method in order to evaluate the nutrition and quality.The results showed that the contents of crude protein,crude fat,crude ash were 55.44%,39.42% and 5.07%,respectively.Eighteen common acids were found in the fresh,the total content of amino acid was 32.22%,and the essential amino acid was 13.90%.The contents of trace elements were also abundant in the fresh such as calcium,phosphorus,iron,manganese,zinc,magnesium and copper,and the heavy metal such as chromium,cadmium and lead were under the requirement of GB 18406.4——2001.
