生鲜鸭组织中重金属污染分析与安全性评价 被引量:3

Heavy metal pollution analysis and safety evaluation of fresh duck tissue

摘要 为了解生鲜鸭组织中重金属污染状况和对其进行安全性评价,于大型超市、农贸市场和连锁店采集鸭不同部位,对Cu、Pb、As、Cd含量进行测定,参照国家食品卫生标准计算超标率,并对各组织的污染程度进行了安全性评价。结果表明:鸭肝、鸭血、鸭肾为重度污染,综合污染指数分别为4.43、4.32和4.25;鸭心和鸭肠为中度污染,综合污染指数为2.40和2.60;鸭腿肉和胸肌处于安全水平,综合污染指数为0.79和0.81。研究结果提示,国家相关部门应加强鸭可食性下水的重金属监控。 In order to understand the heavy metal pollution problem and carry out safety evaluation of fresh duck tissue,different parts of fresh duck tissue were collected from super-markets,farm product markets and chain stores.The content of copper,lead,arsenic and cadmium were conducted according to national food hygienic.Over-limit rate was caculated and pollution level of different tissue was evaluated.Results indicted that liver,blood and kidney were highly polluted,heart and intestines at average pollution level,thigh muscle and chest muscle were at safe range with comprehensive pollutant indexes of 4.43,4.32,4.25,2.40,2.60,0.79 and 0.81.Results point out that the relative state organization should strengthen heavy metal monitoring of edible visceral organ of duck.
