摘要
目的:为生产各种食品、化妆品、医药用品等色素新产品提供重要原料,研究广西壮药薏苡叶色素的提取条件和稳定性。方法:以乙醇作提取剂提取薏苡叶色素,比较pH、温度、食品添加剂、氧化剂和还原剂、金属离子以及光照对薏苡叶色素稳定性的影响。结果:最佳提取工艺条件是以pH=3的65%乙醇溶液为提取液,原料与乙醇的质量与体积比(g/mL)为1:500,室温下浸提24h;薏苡叶色素在330nm有最大吸收峰,不同的pH环境中对色素有不同的影响,当pH<7,温度对色素几乎没有影响,pH>7,温度对其影响比较大。结论:柠檬酸、醋酸、蔗糖、葡萄糖和可溶性淀粉对薏苡叶色素无明显影响,耐光性较差,氧化剂、还原剂中除Na2S2O3对色素有比较明显的影响外,其他均无明显的影响,金属离子离子Fe3+对色素颜色的影响最大,K+、Zn2+、Ni2+、Mn2+、Mg2+、Ba2+,Pb2+等离子对色素也有一定的影响。
Objective:To provide importante lentinus edodes for all kinds of new pigment used in food products,cosmetic and leechdom etc.Study on the extraction of Guangxi's Zhuang Medicine Coix lachryma-jobi L.pigment conditions and stability.Methods:Ethanol was used as the extractant agent,the effect factors(pH,temperature,food additive,oxidizing agent and reducing agent,metallic ions)were investigated.Results:The best extraction process condition is pH3 for 65% of ethanol solvent extract,raw materials and ethanol than the quality and volume at room temperature for 1:500,24 h baptized mention;Coix lachryma-jobi L.leaves in 330 nm have the largest pigment absorption peaks,different pH environment of the pigment has different effects,when pH7,almost no effect of temperature on the pigment 7,temperature,pH value of its influence is bigger.Conclusion:Citric acid,acetic acid,sucrose,glucose and soluble starch on Coix lachryma-jobi L.leaves no significant effect,pigment resistance to light the gender is poorer,oxidant,reductant except for pigment Na2S2O3 had evident effects outside,other were not significantly influence,metal ions of pigment color Fe3+ ion the maximum impact,K+,Zn2 +,Ni2+,Mn2+,Mg2+,Ba2+ and Pb2+ plasma on pigments,was also an influence.
