摘要
根据洋葱及番茄的不同物料特性,进行了国产番茄酱设备配套加工洋葱酱的研究。洋葱酱与番茄酱加工的不同点是,洋葱须经切片、胶磨、酶处理后,其含有的纤维才能通过二道打浆机有效剥离,洋葱浆浓缩后的产品可溶性固形物含量达16 % ~18 % ,符合企业标准Q/SSP1197 。中试结果表明,设计方案可行并在洋葱酱的生产中得到成功实施。
The paper studied onion paste production by re epuiping domestic tomato paste line,according to the different properties of onion and tomato.The obvious point of onion paste production was:after onion being sliced,colloid milled and enzyme treated,its fibres can be separated effectively by two stage pulping,then its onion pulp can be concentrated to 16%~18%.The pilot plant trial showed the plan was feasible and applicable.\;
