摘要
研究冷冻鱼糜及制品中磷酸盐含量的测定方法。采用分光光度计,确定了测定体系的特征吸收波长和显色条件,并建立标准曲线与回归方程。磷酸盐测定体系的特征吸收波长为825 nm,吸光度与磷酸盐含量间的回归方程为y=0.006x-0.005,在0.8μg^100μg范围内具有良好的线性关系(R2=0.999),对于不同的样品其加标回收率为90.78%~94.00%,相对标准偏差RSD为1.38%~4.01%,检测限为83.5 mg/kg,不同实验室间的验证结果无明显差异。该方法操作简单,适合冷冻鱼糜及制品样品的分析,其方法精密度和准确度均能满足分析要求。
Phosphate content in frozen surimi and frozen surimi-based products was determined. The best coloured conditions and characteristic absorption peak of phosphate were determined by using spectrophotometer. The characteristic absorption peak of Phosphate was at λ=825 nm. The Phosphate/ABS Standard equation was y=0.006x-0.005. A good linear relationships (R2=0.999) was found within 0.8 μg-100 μg of Phosphate concentration. The Phosphate rate of recovery was 90.78%-94.00% and RSD was 1.38%-4.01%. The lowest detection limit of was 83.5 mg/kg. This method of detection was easy and suit for use to detect phosphate in frozen surimi and frozen surimi-based products.
