摘要
烹饪科学实验是运用科学的研究方法阐述和总结烹饪操作过程中的关键点及规律,由相关烹饪科学的基础实验、烹饪工艺操作的实验、烹饪原料的实验组成。其研究方法主要有:烹饪工艺操作科学实验研究法、烹饪原料成分的化学研究法、烹饪原料食品组织学研究法、烹饪原料物性研究法和统计心理学研究法。
Culinary science experiment refers to the elaboration and summarization of key issues and rules of cooking process with scientific research methods, which is mainly composed of relevant fundamental culinary experiment, culinary art and practice experiment and cooking material experiment. The research method main- ly involve culinary art operation science research method, chemical research of cooking material, cooking material collection and mixture science, study of the physical property of cooking material and statistical psychology method.
