摘要 应用Design-Expert7.0软件对鳙鱼鱼鳞脱钙工艺进行了三因子二次通用旋转组合设计。以盐酸质量分数、振荡脱钙时间、液固比3个因素对脱钙工艺条件进行了优化试验,建立了以脱钙率为单目标的鱼鳞脱钙二次多项回归方程的数学模型。结果表明:上述各因素对鳙鱼鱼鳞脱钙效果影响程度依次为液固比>脱钙时间>盐酸质量分数。运用Matlab对模型进行了最优化计算,获得最佳脱钙工艺条件为:盐酸质量分数5.14%、振荡脱钙时间56.61 min、液固比23.74 mL/g,在此条件下脱钙率达到87.02%。建立的模型计算值与实验结果吻合度较好,可用来预测不同条件下的鳙鱼鱼鳞脱钙率。 In this paper, the optimization model of decalcification of bighead carp scale was studied by Design- Expert7.0 software. The effects of hydrochloric acid concentration, decalcification time and ratio of liquid to carp scale on the decalcification rate were studied by using three factors quadratic general rotary design. As a result, the order in effects of three factors on the decalcification rate is: ratio of liquid to carp scale 〉 decalcification time 〉 hydrochloric acid concentration. The optimum scheme was acquired by calculation via Matlab, that is, hydrochloric acid concentration 5.14%, decalcification time 56.61 min and ratio of liquid to carp scale 23.74 mL/g, under which the decalcification rate reached 87.02%. The established model was proven to be consistent with experimen- tal results and can predict the decalcification rate of bighead carp scale at different operation conditions.
