摘要
乳糖酶在特定条件下可将乳糖水解成葡萄糖和半乳糖,对人体健康有重要作用。本文简要介绍了乳糖酶的功能及应用,并通过UHT乳乳糖水解试验对比几种乳糖酶的水解率,从而确定水解率高的乳糖酶。
Lactase under specific conditions can be lactose into glucose and glucose has main effect to human body health. This paper briefly introduces the function and application of lactase, and through UHT milk lactose hydrolysis test comparing several lactase hydrolysis rates, so as to determine the rate of hydrolysis high lactase.
